Meat Free Monday is a not-for-profit campaign which aims to raise awareness of the detrimental environmental impact of eating meat and to encourage people to help slow climate change. Launched by Paul and Stella McCartney in 2009, MFM’s mission is to preserve precious natural resources and improve the health of the population by having at least one meat free day each week. Why not make today the perfect time to stop and think about your food choices. Try something new and get a bit more experimental with what you eat. We love this delicious veggie quiche recipe.

Crustless Tomato and Courgette Quiche

Servings: 6 portions Cook Time: 20 – 25 minutes INGREDIENTS 1 large Courgette 1 Red Pepper sliced 9 slices Tomatoes 8 large Eggs 2 tbsp Quark 2 Spring Onions chopped 1 handful Fresh Parsley chopped Sea Salt Freshly Ground Black Pepper METHOD
  1. Preheat the oven to 190°C
  2. Spiralise the courgette and season with a little sea salt
  3. In a bowl, mix the eggs and quark together then season
  4. Place the courgette, spring onion, peppers and parsley in the quiche dish
  5. Pour in the eggs mixture
  6. Place the sliced tomato on top, season with a little salt and black pepper
  7. Cook for 20 - 25 minutes or until the quiche is set and starting to colour
  8. Allow to cool slightly before removing the quiche from the dish
